A LITTLE ABOUT US.........

At LOT EIGHT, we release 4 oils each year; 2 extra virgin olive oils, a single blend and a Citrus olive oil. Harvest begins when the trees are ready to let go of their fruit. Bitterness and pungency are characteristics we look to avoid in our oils and therefore picking the fruit at the right time is key. The olives are first inspected as they are harvested and once again, before they reach the hopper for pressing. Twigs, branches and bark are removed to ensure only olives end up in the hammermill.

The oils are first tasted for defects as they pour out of the press and then many times before the final blend is decided. They are later tested for Free Fatty Acids and Peroxide Levels. These tests ensure that all LOT EIGHT extra virgin olive oils meet the requirements of the International Olive Oil Council in Madrid, Spain.

At LOT EIGHT, great emphasis is given to time, as it is critical for the sediments to settle, a stage directly linked to the quality and taste of the oil. At 8 weeks, samples are drawn from each batch and Nalini, our oil maker, begins the seasons blending process. The oils are bottled unfiltered in dark glass to preserve the characters of the oil, which like wine, sometimes results in small amounts of residue. This is 100% natural and can be discarded before use. We always recommend that our oils are stored in a cool dark place to retain their flavours.

Our oils can be used in salad dressing or drizzled over your favourite dish. They can be used on roasts, grills, soups, risottos, antipastas, pasta, or simply as an accompaniment with bread. All LOT EIGHT oils are termed condiment oils. This means they are best used in their natural form and preferably at room temperature.

Nalini grew up with citrus pickles and continues to make them each year so that she is never short of that taste when enjoying her spicy food. It is the love of citrus and years of using them in different recipes that gave her the desire to make her own citrus olive oil. After 4 releases and many happy customers and chefs, we have decided that the LOT EIGHT range of products will always include a citrus olive oil.

LOT EIGHT produces marinated olives, pesto, tapenades and dukkah to the same high standards as their olive oils, which explains their popularity. All the provisions are handmade in our very own commercial kitchen handmade in small batches with recipes inspired by Nalini’s love of gourmet cooking. Our tasting room offers gourmet tasting platters and bookings are essential as our products are made fresh for the occasion and the tasting room is in great demand. We keep our production days separate from the days we hold the tastings and prior bookings allow us to ensure that neither is compromised.
